By Janet Kelly

Food from the south part of country are cooked fried traditionally with chicken being the meat that is chosen mostly. They were developed by Black Americans from the meals they made centuries ago when the slave trade was legal still. Because learning how to read and write were illegal for the slaves, their recipes were passed down orally until the emancipation.

People associate their meals usually as being unhealthy and greasy but this has recently been changed with the adaptation of new cooking techniques. You could even visit and try southern food Avon by the Sea to experience these healthier options there. Here are a few tips you can follow in creating a healthier southern meal with more nutrition.

Use less oil or some healthier alternatives such as canola, peanut or olive oil rather than hydrogenated fats to lighten up your food. First, soak the chicken with buttermilk in increasing its juiciness then cover them lightly, not with double breading but with panko breadcrumbs. Add flavor by mixing cayenne pepper and garlic powder to the breading and not fat.

The chicken can be over fried after and still get a similar results of a crispy and juicy meal without including extra calories. Choose fruits and vegetables in season because they have peak flavors during this time and using half of butter or salt will enhance their taste. Replace butter and cream for mashed potatoes with chicken broth and low fat milk.

In southern area, there is an abundance of vegetables and fruit because their climate has hot summers and mild winters that results to longer seasons for growing. Their abundance is throughout the year which makes them regular ingredients for meals. Using them more will make your dishes healthful specially with proper preparation.

To create a stew instantly, pair okra and tomatoes and roasting sweet potatoes will bring out its natural sweetness while adding vanilla, nutmeg and cinnamon enhances the flavor. Saute greens with garlic and olive oil or slowly cook them in chicken or in vegetable broth for additional savory element. Red pepper flakes or hot peppers gives more taste when added.

Fruits are always a good choice for dessert though southerners usually do not directly eat them but are made to pies and cobbles and the popular choices are peaches and blackberries. Use vegetable oil in making them and use flour mixed with lemon juice instead of sugar. You could eat them with toasted silvered almonds, vanilla yogurt and grilled with honey.

If you prefer not to eat animals then substituting their meat is possible with tofu which is the most common substitute. But there are other alternative products like veggie burgers and tempeh that has more flavor than tofu. Among the favorites are beans and legumes which are usable on recipes imitating meat based food.

Nondairy butter and milk are available for vegan meals and creamy recipes use the former for their needs. The milk is gotten from hemp, almond, soy, coconut and cashew that are alternative of dairy cream. When the recipe calls for butter then use coconut oil or nondairy butter instead.
